Sorry for being MIA lately (I'm sure so many missed me) - but I have this found obsession called Making a Murderer.  The hubby and I are hooked and it's some of the craziest stuff I've ever heard. If you have Netflix, watch it now!!

Ok, now back to our regular scheduled programming :)

I love finding new recipes that a major hit - so I thought I would share some tried and true dinner recipes I've made lately that we are loving!

This loaded baked potato soup - O.M.G. delish!! When I first made it the hubs immediately said "Add this to the rotation!" - I served this with BLT's but of course the kids had to have grilled cheese and they barely touched the soup *sigh*

This rustic Loaded Potato Soup is so easy to make and has a ton of flavor!! Loaded Potato Soup is comforting, warm and you can tailor it to your tastes.:

This chicken enchilada casserole is a family favorite!! I seriously make this once a week, it's just sooooo good. Ella always has seconds, sometimes thirds and one time had fourths! I always pair it with mexican rice and carrots.

Easy Chicken Enchilada Casserole – 4 ingredients is all it takes to make this popular Mexican dish. It’s cheesy, it’s spicy, it’s sinfully delicious.:

This cheesey beefy tortellini bake is amazing! So simple and easy to make and so so yummy!

This risotto and scallops recipe was so good - but I did swap out scallops for shrimp because that's what I had - I can't wait to try with scallops next!

Brown Butter Scallops with Parmesan Risotto and Garlic Spinach - a cozy, romantic recipe that feels like a fancy restaurant meal at home! | pinchofyum.com:

This smoked sausage and potatoes was another hit! Bonus points for it being a croc pot recipe!
