Weekly Recap {3.12.18}

Happy Monday friends! Our week was kind of low key but still fun.

Monday is always running errands so that's what me and Miss A did while Ella was at school (and of course Brayden too)

Tuesday Ella had speech and in the afternoon I took the girls to the library for the fun STEM class they have. On the way there it was snowing these huge, giant snowflakes! I tried to get a picture but it doesn't even do justice. It was so pretty! It only lasted a few minutes though

Wednesday was pajama day in Ella's class! Here she is with her bestie. And she's wearing a star because she was the V.I.P. all week :)

Thursday night I went upstairs to go to bed and I see this as I passed Brayden's room - Ella camped out on his floor. The next day they said they wanted to have a sleepover - so cute!!

Friday was the last day Ella was the V.I.P. so me and Avery got to stay for a little in the beginning of class. We watched Ella lead her class with all of their daily routine - the weather, the calendar, the pledge, the songs, etc. It was SO fun seeing my girl be a leader!

We had to bring an item in the mystery bucket and give clues to the class. We wanted to stump them and we did - she brought her pressed penny book and she couldn't have been cuter giving out the clues!

Friday after Brayden got home we watched Wonder, OMG so good! If you haven't seen, watch it, especially if you have kids. Ella even enjoyed it even though I thought she might be too young.

At night we had pizza and hung out then when the kids went to bed we watched Home Again with Reese Witherspoon. It was a cute movie.

Saturday morning we had our usual dance classes for the girls then we met up with my sister and nephew at my brother in laws brewery's event - it was a big wheel race for adults only and omg was it hysterical! That is until one guy actually got really hurt and left on a stretcher. Either way, it wan event put on by my BIL's work

When we got home Rick started working on our master closet - we took all the old shelving out and put in new stuff. He called it quits around 7 and we ate and just hung out. I think I passed out by 9 on the couch, ha.

Sunday it was back to the closet first thing and I was busy getting rid of tons of clothes/shoes I don't wear anymore. By noon the closet was done and everything put back in and it is so much better!! I'll share some pics later this week.

Then Rick got to work helping Brayden with his leprechaun trap for school. I helped him with the first half then Rick helped with the pully system to catch him with a cup. I think it turned out so cute!

Later in the day we went by my in laws and all the cousins got to hang out. When we got home Avery insisted on putting on her nightgown and wearing my high heels (I'm in trouble with this one!!)

And there you have it, a super low key week/weekend but still really fun and productive!!

Friday Favorites {3.9.18}

Happy Friday!! We had a good week but I'm always excited to see the weekend! Ours will be low key which is always nice. I'm looking forward to chillin in tonight and drinking some of my favorite wine 🍷

Let's dive into my favorites!

{ONE} - New Recipe

Earlier this week I shared a super yummy crustless quiche recipe - if you missed it, you can see it here   It's so good we've been eating it every week!

{TWO} - Brayden

This week Brayden has been getting breakfast ready for himself and his sisters every morning! It's so sweet and these moments are my favorite! I love this picture that Ella snapped of him getting cereal ready :)

{THREE} -  Fun kitchen gadgets

I've been seeing this salad bowl cutter all over and have even posted in my FB group before, but have yet to get it. Next time I see it pop up on a deal that will change though! I love things that can help me be more efficient and I'm a big salad eater so I know this would get used.

I've been using this soak + strain bowl for a couple of years now and I love it! When I get home from the grocery store, my produce goes in with water + a little vinegar and then I just pour the liquid out once done! So easy and it gets used all the time

{FOUR} -  Wedges

I have been eyeing espadrille wedges forever now but I'm super particular in how they look (and of course I don't want to spend too much) I want open toe but not too open and the perfect colors/height. Well, I finally found them just a little too late because my size is sold old, womp womp. I have now started a manhunt to find these in my size! My Nordstrom said they should be on their way to the Rack so starting next week I'll be hunting those stores down!

{FIVE} - Spring Craft

We are always looking for new crafts to do around here, they are our favorite for sure!! I saw this and it looks cute and easy enough for Avery and Ella will enjoy it too. This will be on our list for next week!

This paper plate flower craft is a great spring and summer craft for kids. It offers kids a great opportunity to work on scissor skills.

{SIX} - Girl Chat Link up

Our next Girl Chat Link up is next Thursday!! We're talking Easter baskets! We hope you join in!!

I hope everyone has an awesome weekend!!

Spinach, Feta & Sausage Crustless Quiche

I love a good quiche, especially ones with that delicious buttery/flaky crust. Buuuut, since I'm on the eating healthy train, I decided to throw together some ingredients I had on hand to create my own yummy crustless quiche.  Of course this would taste better with crust, but really, it's delicious and I *almost* don't even miss the crust.

Here's what you need to make this:

6 eggs
1/2 cup of milk
1 tblsp of Parmesan cheese
salt + pepper
3-4 breakfast sausage links
Handful of spinach
1/2 cup of crumbled feta cheese

What to do:

Preheat your oven to 350. Cook your breakfast sausage - I like to use the pre-cooked breakfast sausage from Costco so this only takes me a minute in the microwave. Once done, cut up into small pieces. Whisk eggs, milk, parmesan cheese + spices together in a bowl. Add in your sausage.

In a greased pie dish (I use non stick spray), lay your spinach down first, then add the crumbled feta cheese. Then pour your egg mixture over the top.

Bake for 44-55 minutes - I like to then broil it at the end for a few minutes to get that nice crisp top. I cut this into 4 pieces and each one serves as my breakfast (or lunch) - It's delicious!!

So, are you a quiche person or no?

Weekly Recap {3.5.18}

What a fun week we had!! We had some super nice weather mixed in with a really cold/rainy day, then finished off with a gorgeous weekend.

We played outside ALOT with the nice weather we had. Ella rode her bike alot, we played softball, tennis, rode scooters and just ran around!

We played at our nature center's park with a friend and the girls did not want to leave! They've been asking to go back everyday.

We crafted some leprechauns because Ella has been all about St. Patrick's Day this year

The kids played Dr and Brayden was a good sport letting his sister give him a physical :)

Brayden did some Dr. Suess crafting at school Friday so he wanted to show it off and then Ella wanted in on it :)

Friday night Brayden's buddy came over to work on pitching with Rick and afterwards his Dad and little brother came to pick him up and the boys had a blast dabbing in the back of Ricks truck ha ha

Saturday after the girls' dance class, we headed to the zoo! It was in the 40's so still a little chilly, but the sun totally helped and it was nice to get there as a family.

After the zoo we went to hang out with some friends and stayed out way past the kids bedtime, but they were just fine. Sunday was spent having Brayden's friend over, going to the park, then hanging out by my in laws for a while.

While Rick and Brayden were at baseball practice, I watched the red carpet in peace while Avery napped a little and Ella played quietly.

Hope your weekend was a good one!!
