What's for Dinner?

I'm back today with another installment of What's For Dinner - I've done this a couple of other times and I think these are good posts, what do you guys think? I know I love when I hear tried and true good recipes!

Here's what I've rounded up for today's post:



First up is from what my favorite bloggers - it's a jalapeno popper burger and it's so so good!

The next recipe is from yours truly - it's shrimp and asparagus over quinoa and not only is it healthy, it's super yummy!

These beef enchiladas make their way to our kitchen table once a week, they are that good (and so easy!)

I know it's summer and HOT but who doesn't love a good homemade mac n' cheese dish?? This one (again by me) is soooooo good!!

Baked Spaghetti with vodka sauce

Happy Hump Day! I'm not sure how it's already Wednesday - I totally thought this first week back from our mini vaca would drag but it's not seeming so.


I'm sharing today a super easy and super yummy dinner! This isn't the healthiest dish with the cream cheese but it's a household hit nonetheless (and to me that's all that matters these days)





Ingredients:


  • 1 lb of spaghetti 
  • 1 bar of cream cheese
  • 1lb of ground beef
  • 1 jar of your favorite vodka sauce
  • Parmesan cheese

Instructions:

Preheat oven to 350 degrees.

Take your cream cheese out so it is soft by the time you are ready for it.

Boil water and cook your spaghetti al dente. While your pasta cooks, brown your ground beef.

Once the spaghetti is done, put it into a large mixing bowl.  Add your cream cheese and mix together well.




Grease a 9 x 13" baking dish and pour a little of your vodka sauce onto the bottom.  Once your meat is browned, add that to another mixing bowl with your remaining vodka sauce.





After you've mixed your noodles and cream cheese together well, place it on top of the bottom layer of vodka sauce in your dish.



Next, pour your meat/sauce mixture all over the noodles.



Sprinkle with parmesan cheese and pop in the oven for 25-30 minutes.





You'll have to let me know if you try it! This is definitely on the regular rotation around here.

This loaded soup was DELISH! However, I would add about 1/2 cup less of the milk it requires. We felt ours wasn't thick enough.

This dish was made by yours truly and it is soooo good. It's really not spicy but if you don't like spice at all you can omit the cayenne pepper or just use less

My whole family LOVED this dinner.  It was super easy (hello croc pot!) and so tasty! I know some people get turned off by the whole cream of whatever soups, so if that's the case I'm sure you could find a homemade recipe out there for that part.

Fast, easy to make, beef stroganoff, that is family friendly and cooked in the Slow Cooker or Crock Pot! This is one of the most popular recipes on this blog and for good reason. - Eazy Peazy Mealz:

The most delicious chicken pot pie

Happy Tuesday Friends! We had a nice long weekend over here and now it's back to the grind.

Today I thought Id share a super yummy homemade chicken pot pie recipe. Food is my love language and I can seriously eat an entire pot pie....but then I would not love myself very much :)






Anyway - this recipe is adapted from this one but I changed a few things. 

To make this chicken pot pie you will need:


  • Pack of 2 frozen pie crusts (usually 2 come in a package) - thawed
  • 1 large potato peeled and cubed into small pieces.
  • 16oz if frozen mixed veggies (I use the one with carrots, peas, green beans, corn and Lima beans)
  • 1 cup of cooked shredded chicken 
  • 1 small onion chopped
  • 1/2 cup of butter
  • 3/4 cup of milk
  • 1 1/2 cup of chicken broth
  • 1/2 cup flour
  • Salt and pepper
Preheat the oven to 425.

In a saucepan add your potatoes to water and cook 8-10 minutes, when done set aside.

Meanwhile in a large skillet (one with higher sides, I actually use my wok for this) melt your butter over medium heat. Add the onion and cook for a few minutes.

Stir in your flour then slowly add the milk and chicken broth. Bring to a boil then cook for 2 minutes (or until thick)

Turn off the heat and add in your shredded chicken, frozen veggies, potatoes, and salt and pepper, mix well.

Scoop the filling into one pie crust until it is is filled. Take the other pie crust and place it on top. Use your fingers to close both ends together.  I also made an egg wash and brush it all over.

Bake for 30 minutes and enjoy!!

What's for Dinner

Sorry for being MIA lately (I'm sure so many missed me) - but I have this found obsession called Making a Murderer.  The hubby and I are hooked and it's some of the craziest stuff I've ever heard. If you have Netflix, watch it now!!

Ok, now back to our regular scheduled programming :)

I love finding new recipes that a major hit - so I thought I would share some tried and true dinner recipes I've made lately that we are loving!



This loaded baked potato soup - O.M.G. delish!! When I first made it the hubs immediately said "Add this to the rotation!" - I served this with BLT's but of course the kids had to have grilled cheese and they barely touched the soup *sigh*

This rustic Loaded Potato Soup is so easy to make and has a ton of flavor!! Loaded Potato Soup is comforting, warm and you can tailor it to your tastes.:




This chicken enchilada casserole is a family favorite!! I seriously make this once a week, it's just sooooo good. Ella always has seconds, sometimes thirds and one time had fourths! I always pair it with mexican rice and carrots.

This risotto and scallops recipe was so good - but I did swap out scallops for shrimp because that's what I had - I can't wait to try with scallops next!

This smoked sausage and potatoes was another hit! Bonus points for it being a croc pot recipe!
